Buttermilk Basil Vegetable Dip
(Adapted from Confident Choices: A Cookbook for Interstitial Cystitis and Overactive Bladder)
Ingredients
- 2 c. fresh basil, chopped finely
- 2 green onions
- ½ c. buttermilk
- ¾ c. low-fat cottage cheese, strained
- 1 t. lemon zest
- ½ t. salt
- ½ t. pepper (if tolerated)
Combine fresh basil, green onions, buttermilk, and cottage cheese in blender. Blend until smooth. Add lemon zest, salt, and pepper and whisk together.
